How wonderful is it to snack on delicious, fresh strawberries? With these lovely berries in season, and the incredibly warm temperatures, I simply had to make something light and fresh for lunch today. I added pecans for some extra protein and texture, as I like my salads to be satisfying and filling, while still light. I hope you enjoy this Fresh Strawberry Salad Recipe!
Just look at the gorgeous colours, it is almost too lovely to eat.
This combination just makes my mouth water!
Fresh Strawberry Salad Recipe with Poppy Seed Dressing
5 cups spring mix salad or other greens
3 cups strawberries, sliced
1 avocado, diced
1/3 cup pecans
1/2 cup feta cheese, crumbled (optional)
Poppy Seed Dressing:
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1/2 tablespoon agave syrup (or honey)
1/2 tablespoon poppy seeds
pinch of salt and pepper, to taste
- In a small bowl, stir together the olive oil, balsamic vinegar, syrup, poppy seeds, and salt and pepper. Set aside.
- In a large bowl, combine the greens, strawberries, avocado, feta cheese and pecans.
- Add dressing to large bowl, toss to coat.
